Bird's-eye chilies, lemongrass, kaffir limes, galangal, holy basil — coaxed through Tasmanian winters in our poly-tunnels so the volatile oils never see a refrigerated truck.

Northeastern Thailand's cooking is sharp, herbal, fermented and uncompromisingly hot. It needs ingredients that are alive. Our garden is that ingredient list.
